beef & chorizo burger
an homage to the outrageous baltimore burger at R&R Taqueria
Servings 4 burgers
Ingredients
for the burgers
- 1 lb. ground beef (i prefer 80/20 for best flavor)
- 1/4 lb. pork chorizo (i use cacique brand)
- 8 slices bacon
- 2 tsp. kosher salt (i use diamond crystal brand)
- 2 tsp. ancho chili powder
- 2 tsp. cumin
- 1 tsp. garlic powder
- 1 tsp. mexican oregano
- 1 tsp. ground black pepper
for the chipotle mayonnaise
- 1/2 cup mayonnaise
- 2 tsp. chipotle peppers, chopped, with sauce (i like la costeña brand diced chipotle peppers in the jar)
- 1/2 tsp. fresh lime juice
- 1/2 tsp. kosher salt (i use diamond crystal brand)
- 1/2 tsp. brown sugar (optional)
for topping & assembly
- 1 avocado (halved and sliced thinly)
- 1/2 cup red or white onion (sliced thinly)
- 4 whole romaine leaves (washed, dried, and cut in half crossways)
- 1 medium tomato (sliced thinly into rounds)
- 1 medium to large jalapeno pepper (sliced thinly into rounds; seeds removed if desired)
- 8 slices provolone cheese
- 4 brioche style burger buns (we like the nature’s own brand)
