freezer chicken pot pie
Ingredients
- 3 cups cooked chicken (or beef, or pork… any meat you like) diced or shredded, rotisserie works great
- 1 lg. onion chopped
- 2 9" frozen deep dish pie crusts
- 2 9" pie crusts the refrigerated kind
- 32 oz. frozen mixed vegetables
- 12 oz. frozen hash browns the cubed kind, not the shredded kind
- 2 cans cream of chicken soup
- 2 tsp. parsley
- 1/2 cup milk
- salt and pepper to taste
Instructions
- Combine all ingredients into a large bowl.
- Divide between the two (frozen) pie crusts. Cover tightly with foil and freeze.
- To prepare, remove and unwrap a pie, top with a refrigerated pie crusts, poke a few holes in the top, and bake at 350° for 60-75 minutes until bubbly and browned on top (check with a thermometer for 165° if you’re unsure that it’s ready).
