There used to be a little Mexican restaurant in Jessup, MD that we absolutely loved. Most of their business was done at a walk-up counter, with cascading drink dispensers filled with horchata and aguas frescas (honest-to-goodness “fountain” drinks!).

The staff, from cooks to servers, spoke mostly Spanish and brought an unmistakable sense of authenticity to the experience. We always chose to eat in, the better to pore over the menu and decide which new item to try. They served menudo, huaraches, and some of the best tacos we’ve had to this day.

You didn’t have to speak Spanish to order here, but it sure didn’t hurt!

The restaurant was called R&R Taqueria, and it was the smaller cousin to the larger, flashier flagship location in downtown Baltimore, where Justin would often go for lunch (back when people had “offices” in large buildings you had to work in every day!)

We honestly liked the smaller, more intimate Jessup restaurant better, except for one glaring disappointment for Justin: an absence on the menu of the signature “Chori 2017 Baltimore Sun Best Burger.” Made with a mix of ground beef and chorizo and loaded with toppings — including an optional fried egg — it definitely qualified to be one of “Chef Rod’s Outrageous Burgers,” and we kept hoping one day they would add it to their menu, too.

This recipe is my homemade “homage” to the impressive burger that apparently wowed even the likes of Guy Fieri when he profiled the Baltimore location on his “Diners, Drive-Ins, and Dives” show.

If you find yourself in Baltimore’s Inner Harbor looking for lunch someday, we highly recommend you check them out. Until then, you can approximate the decadence of this over-the-top treat right in your own kitchen or backyard.

Ingredients

for the burgers

  • 1 lb. ground beef (i prefer 80/20 for best flavor)
  • 1/4 lb. pork chorizo (i use cacique brand)
  • 8 slices bacon
  • 2 tsp. kosher salt (i use diamond crystal brand)
  • 2 tsp. ancho chili powder
  • 2 tsp. cumin
  • 1 tsp. garlic powder
  • 1 tsp. mexican oregano
  • 1 tsp. ground black pepper

for the chipotle mayonnaise

  • 1/2 cup mayonnaise
  • 2 tsp. chipotle peppers, chopped, with sauce (i like la costeña brand diced chipotle peppers in the jar)
  • 1/2 tsp. fresh lime juice
  • 1/2 tsp. kosher salt (i use diamond crystal brand)
  • 1/2 tsp. brown sugar (optional)

for topping & assembly

  • 1 avocado (halved and sliced thinly)
  • 1/2 cup red or white onion (sliced thinly)
  • 4 whole romaine leaves (washed, dried, and cut in half crossways)
  • 1 medium tomato (sliced thinly into rounds)
  • 1 medium to large jalapeno pepper (sliced thinly into rounds; seeds removed if desired)
  • 8 slices provolone cheese
  • 4 brioche style burger buns (we like the nature’s own brand)
