Ingredients

  • 3 cups cooked chicken (or beef, or pork… any meat you like) diced or shredded, rotisserie works great
  • 1 lg. onion chopped
  • 2 9" frozen deep dish pie crusts
  • 2 9" pie crusts the refrigerated kind
  • 32 oz. frozen mixed vegetables
  • 12 oz. frozen hash browns the cubed kind, not the shredded kind
  • 2 cans cream of chicken soup
  • 2 tsp. parsley
  • 1/2 cup milk
  • salt and pepper to taste

Instructions

  • Combine all ingredients into a large bowl.
  • Divide between the two (frozen) pie crusts. Cover tightly with foil and freeze.
  • To prepare, remove and unwrap a pie, top with a refrigerated pie crusts, poke a few holes in the top, and bake at 350° for 60-75 minutes until bubbly and browned on top (check with a thermometer for 165° if you’re unsure that it’s ready).
